Different users are granted different rights: a normal employee might be able to read certain records, a manager to edit them, and only an administrator to delete them or change settings. Limiting access this way means that if one account is compromised, the damage is contained to what that account was allowed to do, and it stops users from seeing data they have no reason to access.
